Salmon roll in muffin form

Who’s ready for this viral sushi trend? I give you Salmon Rice Muffins; they’re tortillas/nori, rice, salmon and topped with all your sushi condiments from soy sauce to spicy mayo and veggies in between. I’ve done this recipe with both nori and tortillas, and it's the tortillas for me. You have the crispy exterior and it's filled to the brim with all the salmon. Sushi night is served at home.
Prep Time: 20 minutes
Cook Time: 30 minutes
Makes 24 muffins
Salmon Rice Muffins Ingredients
12 large tortillas, halved
2 c cooked white rice
1.5 lbs salmon diced
1/4 c gf soy sauce plus serving
1/4 c gf teriyaki
2 T rice vinegar
1 T sesame oil
1/2 cucumber diced
1 avocado diced
Spicy mayo for serving
Sesame seeds garnish
Directions
Preheat oven to 350 degrees.
Grease muffin tins and form tortillas into them.
Combine soy sauce, teriyaki, vinegar and sesame oil. Add salmon and marinade for 5-10 mins.
Spoon rice into muffin tins and top with salmon. Press down with the back of a spoon to compress the ingredients.
Drizzle with the marinade and bake for 20-25 mins until tortillas are crispy.
Remove from oven and let cool a few minutes.
Garnish with cucumber, avocado, spicy mayo, soy sauce and sesame seeds.
