Hasselback-style salmon with rice, cucumber avocado salad and spicy sauce

Who’s ready for a fun salmon recipe? This Spicy Hasselback Salmon plays a twist on a spicy salmon roll for sushi night. You’ve got rice, salmon seasoned with blackening seasoning, avocado cucumber salad, spicy mayo and sesame seeds on top. I love eating sushi and anytime I can do a play on sushi, I won't say no to eating it. Shoutout to @healthyishfoods for the idea of this dish!

Serves 4
Spicy Hasselback Salmon Ingredients
3 c white rice cooked
4 salmon fillets skin on
Salt to taste
Pepper to taste
1/2 T paprika
1 t onion powder
1 t garlic powder
Dash of cayenne pepper
1/3 c Mayo
3 T sriracha
3 T gf soy sauce
Sesame seeds garnish
2 avocados diced
1 cucumber diced
2 jalapeños diced
Directions
Preheat oven to 400 degrees.
Combine paprika, onion powder, garlic powder, cayenne, salt and pepper. Slice fish without going through the skin every 1/2 inch. Sprinkle seasoning on both sides of fish and make sure to get in between slices.
Bake fish for 15 mins.
Combine mayo, sriracha, and soy sauce. Set aside.
Combine avocado, cucumber and jalapeño.
Spoon rice onto plate and top with salmon. Spoon avocado cucumber salad over the top and drizzle with sauce. Garnish with sesame seeds.
