Classic Italian dish of crispy, cheesy chicken with loads of sauce and served with pasta

What's a recipe you grew up eating that you would dream about each week? Chicken Parmesan is one of those for me, as I would always eat so much Italian food and pasta growing up. There's just something about a crispy piece of chicken, topped with tons of cheese and sauce plus pasta and sometimes garlic bread too. My brother was an extremely picky eater growing up, so Italian food was very common in our house. Chicken Parmesan was a dish that everyone besides him enjoyed. I keep all the classic flavors in this gluten free version, and make sure the chicken breast is crispy on the outside and juicy on the inside.

Cook Time: 30 minutes
Serves 4
Chicken Parmesan Ingredients
4 chicken breasts pounded thin
Salt to taste
Pepper to taste
1 t paprika
1/2 t garlic powder
1/2 t onion powder
1/2 c gf flour
2 eggs beaten
Dash of hot sauce
8 oz mozzarella cheese shredded
1/4 c Parmesan cheese shredded
Dash of oregano
Dash of basil
GF red sauce
1.25 c gf bread crumbs
Olive oil for frying
GF pasta for serving
Directions
Preheat oven to 400 degrees.
Heat skillet with thin layer of oil over medium high heat.
Season chicken with salt and pepper on both sides.
Place flour with seasonings in one bowl, eggs and hot sauce in second bowl and bread crumbs in third bowl.
Dredge chicken in this order and cook for 2-3 mins per side until golden brown.
Place on a cookie sheet and top with sauce and both cheeses.
Bake for 15 mins until cheese is melted.
Remove from oven. Garnish with basil and oregano. Serve with pasta.
