Crispy Chinese chicken with loads of salt and pepper throughout fried to golden brown deliciousness
When you finally find a good gluten free Chinese spot! That was me the other week at Royal China in Dallas. They have an extensive menu and a majority of their entrees can be made gluten free. My favorite bite of the night was the Salt and Pepper Chicken, which I created here. It’s only a few ingredients but the key is the crisp on the chicken and the seasoning throughout. I cooked the chicken in batches, and I couldn’t even wait for it all to be done before I started snacking on the bite size pieces. It's crispy, salty, peppery and a little spicy with the peppers. Serve it up with rice or eat it on its own and you're all set. I'm so glad to have another Chinese recipe in my playbook and a Chinese restaurant in my city.

Ingredients
1.5 lbs chicken diced
Salt to taste
Pepper to taste
Vegetable oil for frying
1 bunch scallions chopped
2 T garlic minced
1 c cornstarch
2 Serrano peppers diced
2 Fresno peppers diced
1 t Chinese five spice
Rice for serving
Directions
Heat deep pot with oil over medium.
Season chicken with salt and pepper.
Combine cornstarch, Chinese five spice and lots of salt and pepper in bowl. Coat chicken and shake off excess.
Fry in batches for 7-8 mins until golden brown and crispy.
Remove from pot and repeat with remaining chicken until all is cooked.
Fry peppers, scallions and garlic in oil for 2 mins. Remove with a slotted spoon.
Toss chicken with peppers and onion. Serve with rice.
