Chicken Adobo

Tasty Filipino chicken marinated in Asian sauces and cooked to perfection

We’re headed to the Philippines with Chicken Adobo. This recipe was passed down to me by my grandma’s caregiver and is super easy to make. You just got to be patient while the chicken marinades, then cooks. I’ve been making this recipe for over 10 years and the flavors do not disappoint. Serve the chicken and sauce over rice with a little veggies on the side and voila dinner is ready to go.


Prep Time: 10 minutes

Inactive Time: 4 to 24 hours

Cook Time: 1 hour

Serves 4


Ingredients

2 lbs chicken thighs

2 c gf soy sauce

1 c vinegar

1 T garlic minced

1 onion sliced

1/2 t ginger

1/4 c sugar

4 bay leaves

2 c water

White rice for serving

Cucumber sliced for serving


Directions

  1. Combine chicken, soy sauce, vinegar, onion, garlic, ginger, water, sugar and bay leaves in a large bowl. Marinade for at least 4 hours and up to overnight.

  2. When ready to cook, add chicken and marinade to a deep pot and bring to a boil. Reduce heat to medium low and cook one hour stirring occasionally.

  3. Discard bay leaves and serve chicken plus sauce over rice and alongside cucumber.
