Greek Chicken Bowls

Healthy, hearty chicken bowl with grilled chicken, fresh veggies, and all the flavors of Greece

Greek Chicken Bowls inspired by Mary's Whole Life . I saw her make this dish a few weeks ago, and it was instantly something I wanted. Rice, greens, marinated grilled chicken, cucumber, tomato, pickled red onions, feta cheese, tzatziki and nuts. All the flavors worked perfectly together and made me feel like I was in Greece. For a healthy easy weeknight meal, look no further than this bowl.

The fun thing about this dish is you get a mix of rice and greens on the bottom, and you can balance it however you like. The flavors took me back to my time in Athens and Santorini strolling along the cobblestone streets with all the aromas of Greek spices through the air. The tzatziki and pine nuts on top give the dish the perfect cooling element and a crunch.

Prep Time: 30 mins

Inactive Time: 2-3 hours

Cook Time: 20 mins

Serves 4


2 c white rice cooked

4 chicken breasts

Salt to taste

Pepper to taste

1/4 c lemon juice

2 T garlic minced

1 T onion powder

1 T oregano

1 t thyme

1 T parsley

1/4 c olive oil

6 oz feta cheese crumbled

1 cucumber sliced

2 tomato chopped

1/2 red onion sliced

1 c vinegar

2 T Sugar

Pine nuts garnish

Tzatziki garnish

1 bunch lettuce chopped


1. Marinate chicken with oil, lemon juice, garlic, onion powder, thyme, parsley and oregano for 2-3 hrs.

2. Grill for 8-10 mins per side. Let rest and cube.

3.Combine onion, vinegar and sugar. Quick pickle.

4. Place rice and greens at bottom of bowl. Top with chicken, feta, cucumber, tomato, pickled onion, tzatziki and pine nuts.
