Chicken Mole

The Mexican chili and chocolate sauce from Oaxaca, Mexico that is spicy, sweet, salty, umami and more; served with chicken.

It's Taco Night, and I decided to change it up from the traditional version this week, and go with a Mexican delicacy from Oaxaca: Chicken Mole. This is a dish I love getting at Mexican restaurants, when it’s on the menu. I've had it several times across different parts of Texas cause there's so much Mexican and Tex Mex food. Mole is a blend of chilis, spices, nuts, and chocolate; it’s like a umami bomb in your mouth and definitely one of those sauces I lick the plate clean on. I served my chicken mole up with lettuce, tomato, sour cream, rice, beans and tortillas. Great dish for taco night this week, and makes me want to visit Oaxaca soon!


Prep Time: 20 mins

Cook Time: 1 hr

Serves: 4-6


Ingredients

  • 4 ancho or guajillo chilis

  • 1 onion chopped

  • 1 T garlic minced

  • 1 qt chicken broth

  • 3 oz GF semi sweet chocolate

  • 1/3 c peanuts toasted

  • Salt to taste

  • Pepper to taste

  • 2 T sesame seeds toasted plus garnish

  • 1 t cinnamon

  • 1 t coriander

  • 1/3 c raisins

  • 2 lbs chicken breasts

  • Corn tortillas for serving

  • 2 T vegetable oil

  • 2 T GF cocoa powder

  • 2 T GF tomato paste

  • Lettuce for serving

  • 4 tomatoes, chopped and for serving

  • Sour cream for serving

  • 1 T GF paprika

  • 2 T mustard seeds toasted

  • 1/3 c nuts (hazelnuts or almonds), toasted

  • 1/2 T cumin

  • 3 T sugar

  • 1 T oregano dry

  • 4 bay leaves

  • 1 plantain sliced

  • 1 T chili Powder

  • White rice for serving

  • Black beans for serving

Directions

1. Preheat oven to 400 degrees. Season chicken with salt and pepper. Roast for 25 mins. Let cool, then shred.

2. Heat oil in deep pot over medium. Sauté onion and garlic for 5 mins. Stir in chilis, 2 tomatoes, plantain, all spices, nuts, and raisins. Cover with broth and bring to boil. Reduce heat to simmer and cook covered 30 mins.

3. Blend and strain. Return to pot and stir in chocolate and cocoa powder. Simmer 10 mins. Add chicken and cook 10 mins.

4. Spoon mole onto plate and garnish with sesame seeds.

5. Serve mole with tortillas, lettuce, tomato, sour cream, rice and beans.
