Chicken and Beef Kabobs

Combination of chicken, beef, peppers, onions, zucchini, and even mushrooms on a skewer for these summertime kabobs

A lot of us will be grilling this weekend and throughout the summer, so I’m sharing my Chicken and Beef Kabobs. Cubed chicken and beef with red and green bell peppers, onions, zucchini and mushrooms. Legit this recipe is cubing all the ingredients, marinade in a few spices, skewer and grill to perfection. Perfect for the neighborhood bbq, watching fireworks and takes less than 20 mins to cook. Growing up, I was used to the ones my mom would buy from Jewel or Mariano's and since I started eating gluten free; I would rather just make my own from scratch. It lets you choose your proteins, veggies, marinade and cater it to your likes/needs. Pretty much build your own pizza but in grill and kabob form.


Prep Time: 30 mins

Inactive Time: 1 hr

Cook Time: 20 mins

Serves: 7-8 skewers


Ingredients

1.5 lbs steak cubed

1.5 lbs chicken breast cubed

1/4 c olive oil

Salt to taste

Pepper to taste

1 T onion powder

1 T garlic powder

1 T GF paprika

1 red pepper cubed

1 green pepper cubed

1 onion sliced and cubed

1 zucchini sliced

Mushrooms halved


Directions


1. Combine meats, 1/8 c oil, add all seasonings in a bowl. Toss to mix and let marinate one hour.

2. Skewer meat and veggies alternating. Grill for 8 mins per side until meat cooked through and browned.

3. Remove from grill and serve.
