Grilled Buffalo Chicken Sandwiches

Buffalo Chicken made a little healthier with all the fixings

I love Buffalo Chicken, and a Grilled Buffalo Chicken Sandwich always hits the spot. What gets me with Buffalo sauce is the tanginess and the heat. This sandwich starts with a grilled chicken breast tossed in sauce; then topped with Swiss Cheese, Bacon, lettuce, tomato, avocado and creamy ranch…all on a toasty sub roll from Canyon Bakehouse. I could eat this sandwich every week, but I like to make it when I need an easy weeknight dinner that packs loads of flavor. Plus, I make mine a little healthier too by grilling up the chicken versus frying it. Grab a napkin cause you'll need it for all that sauce!


Prep Time: 10 minutes

Cook Time: 30 minutes

Serves 4


Ingredients

  • 4 GF buns/rolls toasted

  • 4 chicken breasts thin

  • Salt to taste

  • Pepper to taste

  • 8 slices bacon cooked

  • 4 slices Swiss cheese

  • 4 lettuce leaves

  • 1 tomato sliced

  • 1 avocado sliced

  • 1/4 c GF ranch

  • 1/2 c GF hot sauce

  • 2 T butter melted

  • 1/4 t GF paprika

  • Fries or Chips, for serving

Directions

1. Season chicken with salt and pepper on both sides. Grill for 6-8 minutes per side. 2. Combine hot sauce, butter and paprika. Take cooked chicken and toss in sauce. Place chicken on bottom bun and spoon a little sauce over the top. Add cheese and bacon. 3. On top bun, spread ranch and top with lettuce, tomato and avocado. 4. Put sandwich together and serve with fries or chips.
