Vietnamese Rice Bowls

Rice, greens, crispy pork stick, fresh veggies/herbs and sauce giving you the Vietnamese eats

Merry Christmas Eve! You have probably picked up from my array of posts/stories this week that I’m Jewish, so I don’t celebrate Christmas…but we do still have a few family traditions and one of those is Chinese food. Growing up, my family would always go to the same Chinese restaurant (The Palace) in the Chicago suburbs on Christmas, as it was one of the only places open. This year instead of Chinese we’re traveling to Southeast Asia; Vietnam specifically for these Vietnamese Rice Bowls. This dish is inspired by an episode of DDD with the fresh veggies and herbs in Asian cuisine served with rice, greens and crispy pork stick. Guy dove right into this dish, and you will too. Prep Time: 30 mins

Cook Time: 20 mins

Serves: 4

Ingredients

1.5 c rice or 3 cooked

2 carrots julienned

1 daikon peeled and julienned

1 c vinegar

Sugar

Cilantro fresh

1 cucumber julienned

1/2 c peanuts crushed

Thai basil/mint

1 lb ground pork

2 T garlic minced

1 T ginger

2 T fish sauce

Salt to taste

Pepper to taste

2 T water

12 rice paper wrappers

Bunch of greens such as lettuce or kale


Sauce

1/4 c fish sauce

1/4 c sugar

3 T lime juice

1 T garlic minced

1/2 T ginger

1/4 c vinegar

3 T GF sweet chili


Directions


1. Combine pork, garlic, ginger, fish sauce, 1/2 T sugar, water, salt and pepper.

2. Fill large bowl with water. Dip rice paper wrappers for 5-10 secs per side. Place spoonful of pork on edge closest to you and roll up.

3. Start by folding over away from you, then fold in edges and roll away from you placing seam side down.

4. Repeat until all pork mixture is used.

5. Heat air fryer. Spray both sides of pork stick with cooking spray. Cook for 18-20 mins flipping halfway.

6. Combine vinegar and 2 T sugar. Pickle carrot and daikon.

7. Combine all ingredients for sauce and mix.

8. Put down rice and greens, followed by veggies, herbs, pork stick and peanuts. Drizzle with sauce and serve.
