Panzanella Salad

Bread salad with loads of veggies and herbs drizzled with vinaigrette

It’s time for a salad, but not a traditional salad: a Panzanella Salad. Panzanella is an Italian salad where bread is the main ingredient, then lots of veggies, cheese, basil, and drizzled with a vinaigrette. When you’re looking for a healthier lunch or to pair with an Italian dinner this is great for that. I will serve mine up with anything from Chicken Milanese to Veal Parmesan to even a big plate of pasta. I love a good piece of bread, so this is a dish I cannot pass up. If you're a bread lover; you will love this too.

Serves: 2-4


Ingredients

1 loaf GF bread toasted cubed

4 tomatoes cubed

1 cucumber cubed

2 oz fresh basil torn

8 oz mozzarella cubed

3/4 red onion thinly sliced

Vinaigrette for serving


Directions


1. Combine all ingredients (reserve a little basil) in a bowl and toss.

2. Spread a little vinaigrette on bottom of plate.

3. Plate the salad and top with remaining basil. Serve with vinaigrette.
