Panko crusted zucchini sticks

Do you need a tasty app that everyone will love? Panko Crusted Zucchini Sticks are one of my go to appetizers, and they’re healthy for you too. I loved eating fried zucchini growing up from Market Day, and this is a snack everyone will love. You get your veggies with the zucchini, and I bake it instead of fry it for a healthier element. Serve it up with a spicy mayo for dipping and you won’t be putting the plate down until you’re finished!


Prep Time: 20 minutes

Cook Time: 20 minutes

Serves 4-6


Ingredients

3 zucchini sliced

1 c cornstarch

5 eggs beaten

2.5 c GF panko bread crumbs

1/4 c Parmesan cheese

Salt to taste

Pepper to taste

Spicy mayo for serving


Directions

  1. Preheat oven to 400 degrees.

  2. Place cornstarch, salt and pepper in one bowl; eggs in a second bowl and panko plus parmesan in third bowl.

  3. Dip zucchini in cornstarch, egg, panko and place on parchment paper lined cookie sheet.

  4. Repeat until all zucchini is breaded.

  5. Bake for 20 mins.

  6. Remove from oven and serve with spicy mayo.
