Pasta in a creamy vodka tomato sauce

Who loves Italian food? There’s nothing better than a good plate of pasta, and this Penne alla Vodka hits the spot. Penne pasta in a vodka cream sauce finished with Parmesan cheese on top and a sprinkle of fresh basil. Would you be surprised to hear I ate this for the first time in California last year; and I couldn’t get enough of the sauce. Don’t underestimate my love for pasta cause I ate this whole plate myself when it’s meant for two. The recipe below is doubled for four and one of a kind. Ciao!

Serves 4
Penne alla Vodka Ingredients
16 oz GF penne pasta cooked
Salt to taste
Pepper to taste
4 tomatoes chopped
1/2 c vodka or white wine
1 c heavy cream
1/2 onion chopped
1 T garlic minced
2 T olive oil
2 T tomato paste
Basil fresh for garnish
1/4 c Parmesan plus garnish
1/2 t crushed red pepper flakes
2 T butter
Directions
1. Heat oil in skillet over medium heat.
2. Sauté onion, garlic and crushed red for 4-5 mins.
3. Deglaze with vodka and reduce by half.
4. Add tomatoes and tomato paste, reducing heat to low and simmering 10 mins.
5. Stir in heavy cream, parmesan cheese, butter and salt and pepper cooking 10 mins. 6. Remove from heat and blend sauce until smooth.
7. Return sauce to skillet and toss pasta in sauce until well coated.
8. Plate pasta and garnish with Parmesan and basil.
