Green Veggie Pasta

I love a good pasta dish and there’s nothing better than this pasta with broccoli, asparagus, peas and a butter sauce finished with cheese over the top. This recipe is perfect for pasta night and an easy weeknight dinner. You can customize it with any vegetables you want, and it's a great way to get your daily dose of vegetables in.

Serves 4



Green Veggie Pasta Ingredients


12 oz gf pasta cooked

1/2 onion chopped

1 T garlic minced

1 bunch asparagus trimmed and sliced into 1 inch pieces

2 broccoli crowns chopped

1 c peas

8 T butter

2 T lemon juice

Salt to taste

Pepper to taste

1/2 c white wine

Crushed red pepper flakes, optional for a dash

Parmesan cheese garnish

1 T basil

Olive oil for cooking


Directions

  1. Heat a couple tablespoons of olive oil over medium heat. Saute onion, broccoli and asparagus for 7-8 mins.

  2. Stir in garlic and peas, cooking 2 mins. Season with salt and pepper to taste.

  3. Add wine, butter, lemon juice. Reduce wine by half.

  4. Toss in pasta, basil and crushed red. Season with salt and pepper to taste.

  5. Garnish with Parmesan cheese.
