Who’s ready for a towering dish? This Seafood Poke Tower brings seafood to a new height. You’ve got rice, salmon, tuna, avocado, mango, shrimp, and spicy sauce to finish it off. We’ve all seen the Ahi Tuna Tower on sushi menus and this is a combo of so much seafood. Make this for your next sushi night today!


Prep Time: 40 minutes

Cook Time: 5 minutes

Serves: 4 towers


Ingredients

3 c white rice cooked

Furikake garnish

1/2 lb salmon diced

1/2 lb tuna diced

1/2 lb shrimp cooked and diced

2 avocados diced

1 mango diced

1/3 c GF soy sauce plus dash

1/3 c GF teriyaki

2 T rice vinegar

1 T sesame oil

1/2 t ginger

1 T lime juice

1/2 bunch scallions chopped

1/2 c mayo

2 T sriracha

Cilantro garnish


Directions

  1. Combine soy sauce, teriyaki, rice vinegar, sesame oil, ginger and lime juice. Split in half in two bowls.

  2. Add tuna to one bowl and salmon to second bowl. Split scallions between both bowls.

  3. Take mold and start with rice on bottom. Top with furikake, salmon, avocado and mango, tuna and shrimp.

  4. Combine mayo, sriracha and dash of soy sauce. Drizzle sauce over the tower.

  5. Garnish with cilantro and serve.
